Picked on a farm in the deep mountains of Yame and shaded for 21 days before harvest, this tea has a deep roasted umami and a pronounced sweetness, with very little of the astringency usually found in a spring tea. The long shading is what does it, as keeping the sun off the leaf builds up sweetness and holds the sharpness back.
Our Gyokuro is brewed differently from the rest of our leaf teas. It takes cooler water and a longer steep in a pre-heated pot, and it is worth taking the time over, as brewing it hot and fast loses most of the sweetness you are paying for.
Our Yame Gyokuro comes from the same grower as our Yame Sencha.

Step 3: Steep for 2 minutes, then pour out completely
