A first-flush tea picked on a farm in the deep mountains of Yame, shaded for 14 days and deep steamed, this tea has a full body with a roasty, nutty character and a soft, sweet finish, with less astringency than a spring sencha usually carries. The deep steaming breaks the leaf down finer than a regular steaming does, which is why the cup pours cloudier and tastes fuller.
The young, tender buds of the tea plant are the ones harvested for spring harvest teas, due to them being particularly rich in flavour.
Our Yame Sencha comes from the same grower as our Yame Gyokuro, and it is the Fukamushi Sencha we serve at YAMA.

- Less bright and grassy than our Kyoto Sencha, if that is what you are after

How we brew it at YAMA
Step 1: Heat up the teapot
Step 2: Add 5g of Yame Sencha, then 150ml of hot water at 85°C. Leave it for 20 seconds
Step 3: Add 90ml of room temperature water and brew for a further 1 minute 30 seconds
Step 4: Pour over a full cup of ice, or into a hot cup with two ice cubes
